2Spread the cooked rice on a baking tray. Add vegetable oil, soy sauce and Marion's Chilli Oil and mix well to coat the rice well.
3Using the back of the spoon, spread the rice evenly on the baking tray. Bake in the oven for about 30-40 minutes, taking it out halfway and tossing it.
4While the rice is baking, add the soy sauce, lime juice, ginger, sesame oil and sugar into a small bottle. Shake it to mix well.
5Place the cucumber, avocado, cabbage, spring onions, mint and coriander in a bowl and mix well. Add the crispy rice on top and drizzle the sauce on top when ready to serve.
