Bis Riha (Egg Curry)


ingredients
  • 4 Eggs
  • 1 Onion
  • 2 Green chilies, (cut in half)
  • 1 ½ tsp Garlic
  • ½ tsp Cumin seeds
  • 1 tsp Chilli powder
  • 1/4 tsp Dill seeds
  • 1/4 tsp Turmeric powder
  • 1 inch Pandan leaf (Ran'mba Faiy)
  • 1 inch Cinnamon piece
  • 5 curry leaves
  • 1 tbsp Dried fish (grounded)
  • 1 cup Coconut milk
  • Salt to taste
  • 2 tbsp Vegetable oil
method
  1. 1Heat water in a large pan and place the eggs. Boil the eggs for 10 minutes and peel off the skin and set aside.
  2. 2In a pan heat 2 tsp Vegetable oil, put in onions, garlic, curry leaves and Pandan (Ran'mba) leaf. Sauté until the all ingredients turn light brown.
  3. 3Add the rest of the ingredients except the milk. Simmer for 5 minutes and add the milk.
  4. 4Add a pinch of Salt to taste.
  5. 5Stir well and add the eggs. Put on the lid and continue to cook for 5 more minutes.
  6. 6Serve with a warm bowl of rice or roshi.
