Toscani with Garlic, Herbs and Tomato Sauce


ingredients
  • Bella Italia Gigli Toscani
  • 2 Teaspoon Olive Oil
  • 3 Garlic Cloves
  • 1 Red Onion
  • Bit of dried Oregano
  • 1 Large ripe chopped Tomato
  • 2 Tablespoon of Peeled Tomato
  • 50g Leeks cut into pieces
  • 20g Chopped Celery
  • Few fresh Basil Leaves
  • Salts and pepper to taste
method
  1. 1 Cook Gigli Toscani in boiling water with a bit of salt for 10 minutes or until al dente.
  2. 2Heat olive oil in a sauce pan over medium heat. Add onion and fry until it has softened. Add garlic, celery, dried oregano and fry few minutes until fragrant.
  3. 3Add fresh tomatoes, peeled tomato and leeks. Reduce heat to low. Simmer uncovered stirring for 20 minutes until sauce has thickened.
  4. 4Add basil leaves and stir occasionally for 5 minutes. Add pasta and season with salt and pepper. Serve with shaved Parmesan cheese.
