Toscani with Garlic, Herbs and Tomato Sauce
ingredients
- Bella Italia Gigli Toscani
- 2 Teaspoon Olive Oil
- 3 Garlic Cloves
- 1 Red Onion
- Bit of dried Oregano
- 1 Large ripe chopped Tomato
- 2 Tablespoon of Peeled Tomato
- 50g Leeks cut into pieces
- 20g Chopped Celery
- Few fresh Basil Leaves
- Salts and pepper to taste
method
- 1 Cook Gigli Toscani in boiling water with a bit of salt for 10 minutes or until al dente.
- 2Heat olive oil in a sauce pan over medium heat. Add onion and fry until it has softened. Add garlic, celery, dried oregano and fry few minutes until fragrant.
- 3Add fresh tomatoes, peeled tomato and leeks. Reduce heat to low. Simmer uncovered stirring for 20 minutes until sauce has thickened.
- 4Add basil leaves and stir occasionally for 5 minutes. Add pasta and season with salt and pepper. Serve with shaved Parmesan cheese.
