Tandoori Chicken Wrap with Yoghurt Mint Sauce

  • 500g Chicken breast
  • 2 tbsp Tandoori Sharwoods curry paste
  • 1 tub greek yoghurt
  • ¼ cup mint, sliced
  • 1 clove garlic (grated)
  • Juice of 1 lime
  • Salt & Pepper
  • 1 bunch Maafahi Lettuce Red Oak
  • 3 Tomatoes (sliced)
  • 1 small onion (sliced thinly)
  • 1 Mission Quinoa Wraps
method
  1. 1First prepare the chicken. Slice the chicken breast into small strips.
  2. 2Add the Tandoori Sharwoods Curry Paste and 1 tbsp greek yoghurt. Salt to season and mix everything. Chill the chicken in the marinade for at least 30 minutes, but you can marinate it for longer as well.
  3. 3Heat oil in a pan over medium-high heat. Add the chicken and cook it on each side till it's browned outside and cooked through, for about 10-12 minutes.
  4. 4In a small bowl, add yoghurt, mint, lime juice, grated garlic and salt and pepper. Mix well and set aside.
  5. 5Heat the Quinoa Wrap in the microwave for about 10 seconds. Build your wrap by first spreading some Mint and Yoghurt sauce on the wrap. Next, put some lettuce, tomatoes and onion.
  6. 6Place the chicken on top and fold the sides and roll up the wrap. This can be enjoyed as it is or toasted as well.
