Pea Pesto

  • 1 cup frozen peas, thawed
  • 1 ½ cup Maafahi holy basil
  • 1 clove garlic, grated
  • ½ cup cashew nuts
  • ½ cup cheddar cheese
  • ¼ cup olive oil
  • Salt and pepper
method
  1. 1Place all the peas, basil, garlic, cashew nuts, cheese and olive oil in a small food processor and blend until it’s creamy. Taste and season with salt and pepper.
  2. 2You can use the pesto in different ways such as in pasta, sandwiches and pizza.
  3. 3This pesto goes particularly well with pasta, and topped with roast cherry tomatoes.
  4. 4To make the tomatoes, roast Maafahi cherry tomatoes in the oven at 200 degrees celsius for about 25-30 minutes.
