Gluten Free Focaccia with Cherry Tomatoes

  • 320g Yes You Can Pizza and Focaccia Bread Mix
  • 60ml olive oil plus extra to drizzle
  • 2 Maafahi brown eggs
  • 100ml lukewarm water
  • 7g instant dry yeast
  • 1 cup Maafahi cherry tomatoes, cut into halves and quarters
  • 1 sprig spring onion
method
  1. 1Pre-heat oven to 180 degrees. Oil a 20cm pan.
  2. 2In a bowl, combine half of the lukewarm water and yeast. Let the mixture rest for about 2 minutes.
  3. 3Add the pizza & focaccia bread mix, lukewarm water, oil and egg. Knead the mixture by hand, until combined and forms a soft dough.
  4. 4Cover the dough with a clean tea towel and rest in a warm space for about 30 minutes.
  5. 5Place the dough on the oiled pan and flatten it to form a rectangular shape.
  6. 6Add the tomato and the spring onion to the topping. Drizzle with some extra olive oil.
  7. 7Place the focaccia in the oven for about 20-25 minutes, till browned slightly.
