320g Yes You Can Pizza and Focaccia Bread Mix
60ml olive oil plus extra to drizzle
2 Maafahi brown eggs
100ml lukewarm water
7g instant dry yeast
1 cup Maafahi cherry tomatoes, cut into halves and quarters
1 sprig spring onion

Pre-heat oven to 180 degrees. Oil a 20cm pan.

In a bowl, combine half of the lukewarm water and yeast. Let the mixture rest for about 2 minutes.

Add the pizza & focaccia bread mix, lukewarm water, oil and egg. Knead the mixture by hand, until combined and forms a soft dough.

Cover the dough with a clean tea towel and rest in a warm space for about 30 minutes.

Place the dough on the oiled pan and flatten it to form a rectangular shape.

Add the tomato and the spring onion to the topping. Drizzle with some extra olive oil.

Place the focaccia in the oven for about 20-25 minutes, till browned slightly.
