Fusilli Giganti Napoletana
ingredients
- 400g Fusilli Giganti
- 3 tablespoon Olive Oil
- 1 large Onion
- 5 cloves Garlic
- ½ teaspoon dried Oregano
- 2 large ripe Tomatoes
- 4 tablespoon peeled Tomatoes
- 1 Carrot
- 40 gram celery
- Fresh Basil Leaves
- Salt and Black Pepper to taste
method
- 1Finely chop onion, celery, tomato, carrot and garlic.
- 2Heat the Olive oil in a pan. Add onions and cook for 3 minutes or until softened. Add garlic, carrot, celery and dried oregano, cook stirring for few minutes until fragrant.
- 3Stir in chopped tomatoes and peeled tomatoes. Stirring frequently, bring to boil. Reduce heat to low and simmer for 20 minutes or until sauce has thickened.
- 4Add basil leaves and season with salt and pepper stirring occasionally for 5 minutes.
- 5Meanwhile, cook the pasta in a large pan of salted, boiling water until al dente. Drain and return to the pan. Add the sauce and mix it will. Garnish with cheese, if desired.
