Fried Egg Couscous


ingredients
  • 1 Cup Siena Couscous (cooked)
  • 1/3 cup vegetable stock
  • Olive oil
  • 2 small carrots (grated)
  • Chunk of butternut squash (grated)
  • 1/2 cup peas
  • 2 eggs - beaten
  • Soy sauce & chili flake to taste
  • Few fresh coriander leaves, for garnish
  • 1/2 Bell pepper, for garnish
method
  1. 1Add the couscous in a pan and add the vegetable hot stock and stir well. Leave to absorb.
  2. 2Heat the olive oil in a separate frying pan and add all the vegetables. Stir fry the vegetables for a minute or two.
  3. 3Add the couscous and cook for a few minutes.
  4. 4Make a well in the center of the pan and pour in the beaten eggs.
  5. 5Stir the egg and couscous together. Cook until the eggs have set and is thinly coating the grains of couscous.
  6. 6Season to taste with soy sauce and chili flakes.
  7. 7Garnish with few coriander leaves and bell pepper.
  8. 8Serve immediately.
