Fried Egg Couscous
ingredients
- 1 Cup Siena Couscous (cooked)
- 1/3 cup vegetable stock
- Olive oil
- 2 small carrots (grated)
- Chunk of butternut squash (grated)
- 1/2 cup peas
- 2 eggs - beaten
- Soy sauce & chili flake to taste
- Few fresh coriander leaves, for garnish
- 1/2 Bell pepper, for garnish
method
- 1Add the couscous in a pan and add the vegetable hot stock and stir well. Leave to absorb.
- 2Heat the olive oil in a separate frying pan and add all the vegetables. Stir fry the vegetables for a minute or two.
- 3Add the couscous and cook for a few minutes.
- 4Make a well in the center of the pan and pour in the beaten eggs.
- 5Stir the egg and couscous together. Cook until the eggs have set and is thinly coating the grains of couscous.
- 6Season to taste with soy sauce and chili flakes.
- 7Garnish with few coriander leaves and bell pepper.
- 8Serve immediately.
