Raspberries with Mascarpone Cream


ingredients
  • 250g Mascarpone
  • Sugar to taste
  • Orgran Amaretti Biscotti
  • Ladyfingers
  • 125-200g Raspberries
  • Lemon Zest
  • Icing Sugar
method
  1. 1Put your mascarpone in a bowl and ad a little bit of sugar. It doesn't need a lot but ad whatever you think it sweet enough.
  2. 2If you like it you can add a bit of lemon zest and/or lemon juice as well to break a bit of the fattiness of the mascarpone.
  3. 3Put the ladyfingers in the bottom of a serving glass and break them where needed so you have a layer of sorts
  4. 4Crumble some of the amaretti cookies and stir this through the mascarpone. Take half of the raspberries and puree this with a fork. Stir through the mascarpone but don't be too thorough here as you want to have a swirl effect in there
  5. 5Put half of the mascarpone in the glass on top of the ladyfingers. Depending on the size of your glass you can add another layer on top (ladyfingers first/mascarpone next)
  6. 6Put some pretty raspberries on top of the last layer of mascarpone and sprinkle with some icing sugar.
